Khanom Pang Piah

I found these lovely thingies in the market several days ago with a tiny label, written on the package: "Khanom Pang Piah"! I couldn't help putting a brake on my freaking fast-thinking mind & childlike curiosity...?!?! 
Pang Piah must be related to Tau sar Piah or Hiong Piah or Phong Piah, in short, the Chinese "Piah" family!!! 
ขนมโบราณรูปทรงน่ารัก ได้รับอิทธิพลมาจากหลายวัฒนธรรม ชื่อ "ปั่งเปี๊ยะ" ใครเคยกินแล้วบ้าง? 
ไม่แน่ใจว่าแถวปักษ์ใต้บ้านเราเรียกขนมนี้ว่า "โรตีเป้า" (โรตี + ซาลาเปา) หรือเปล่า? ผิวข้างนอกจะเหมือนขนมปัง "พิต้า" ของกรีกโบราณ ผ่านมายัง ขนมปังบาง "เคบับ" ฉบับกระเป๋าของตุรกี และอาหรับ จนถึง ขนมปัง "ชาปาตี้" เมดอินอินตะระเดีย 
ส่วนไส้ที่เคลือบไว้ข้างใน ได้รับอิทธิพลมาจากวัฒนธรรมจีน คือเป็นไส้ฟักเชื่อม หรือ จันอับ (ซึ่งแผลงมาจากภาษาจีนแต้จิ๋ว ว่า "จิ๊งอับ" ไม่ได้หมายถึงขนม แต่เป็นกล่องใส่ขนมมงคลของจีน โดยเฉพาะงานแต่งงาน งานเลี้ยงฉลองครบรอบวันเกิด หรือ เลื่อนตำแหน่ง ฯลฯ) และ หอมแดงเจียว ซึ่งไส้นี้จะผัดกับมันหมู เหมือนไส้ขนมเปี๊ยะ หรือขนมไหว้พระจันทร์ของคนจีน เชื่อว่าจะให้รสชาติดี ผิวกรอบ เพราะคนจีนไม่นิยมบริโภคหรือปรุงอาหารด้วย เนย หรือ นม เหมือนคนฝั่งตะวันตก หรือ อินเดีย หรือ อาหรับ... 
เมือง อิโป้ เมือง มะละกา และเกาะปีนัง มาเลเซีย มีขนมคล้ายกันเลยแต่แป้งจะหนากว่า เหมือนแป้ง*ขนมเต้าส้อ ผสมกับ**แป้งขนมผัวเมีย ชื่อ Phong Piah, Ipoh ออกเสียงคล้ายกัน คือ "ปังเปี๊ยะ" และ เบ เต้ ส้อ Beh Teh Soh, Malacca... นิยมทานคู่กับชาหรือกาแฟ เป็นอาหารว่าง
หมายเหตุ: คนเก่าคนแก่ในท้องถิ่นบางคนก็เรียกชื่อ ขนมปั่งเปี๊ยะ ว่า ขนมผัวเมียด้วยเหมือนกัน (*, ** ขนมพื้นเมืองของจังหวัดภาคใต้ฝั่งอันดามัน) ซึ่งไม่เหมือนกันเลยกับ ขนมภรรยา หรือ บางคนเรียกว่า ขนมเมียแก่!!! (Lou Poh Paeng/   Wife's Flat Bread) และ ขนมสามี ซึ่งไม่ค่อยเป็นที่รู้จักมากเท่ากับขนมภรรยา ชื่อว่า Lou Kong Paeng/ Husband's Flat Bread ของคนจีนกวางตุ้งฝั่งเกาะฮ่องกง หรือ ฝั่งมาเลเซีย ที่แป้งมีลักษณะคล้ายขนมเต้าส้อผสมกับขนมหน้าแตก ส่วนไส้ข้างในเป็นจันอับกับหอมแดงเจียวเหมือนกันแต่ปริมาณไส้เต็มลูก ไม่ได้แค่ทาเคลือบผิวแป้งด้านใน และกลวงตรงกลาง เหมือนขนมปั่งเปี๊ยะที่นี่...
However, its texture and shape look more like lovely Greek pocket bread"Pita"  and "Chapati", Indian (balloon) flat-bread. Isn't it amazing!!!! The world is so small; we are all "one"!
So what is "Khanom Pang Piah", then?
It's sort of thin bread, made from water dough with the usage of pork lard shortening, candied winter melon mash and fried shallot flakes, glazed inside the dough. With its lightly crispy, paper(or air bag)-like texture and hollow in the middle when pressed or bite, it's ideally served with Pu-erh, Oolong, Earl Grey or your favourite tea or coffee... hmmm :)
Note: I was told by a local senior that this snack is also called "Hubby & Wife" snack! I have seen Lou Poh Paeng (or Wife's Flat Bread) and Lou Kong Paeng (or Husband's Flat Bread) before, but they are not exactly the same like this one...Any idea, dears?!?!
