Annual Earth Hour

This year, the Annual Earth Hour event falls on Saturday, 31 March,
 8.30 – 9.30 p.m.(Thailand local time).
Everyone is encouraged to switch off the lighting and air-conditioning in their homes
from 8.30 p.m. to 9.30 p.m. to help reduce worldwide energy consumption.
...
It reminds me of one of my favorite french poems of the 20th century, by Marc Alyn
(his real name Alain-Marc Fécherolle).
♥♥♥

Air pur, eau pure, oh! mes enfants!
La vie partout, la vie offerte
A profusion, à coeur battant!

Puis vient la guerre: chasse à l’homme!
Puis la chasse; guerre à la bête ;
A bat l’oiseau! Mort à l’énorme!
Il faut mettre au pas la planète!
A présent, la chimie me ronge!
Je compte mes baleines bleues!
Mes pandas, mes oiseaux de songe
Qui ferment un à un les yeux.

Au secours, les enfants des hommes
Le printemps perd son gout de miel;
Redonnez sa fraîcheur de pomme
A la terre, fruit du soleil!!
Marc Alyn

Ratatouille Made in Thailand (My version)

A few days ago, I bought beautiful aubergines, tomatoes as well as haricots verts (string beans) from a green shop whose products are mainly from the King's agriculture project. So today, I decided to make my own version of Ratatouille:-) I stated my own version because I did not have zucchini,  red/yellow capsicum, onions and some herbs in store... well, well, well! However, you'd better see below ingredients, how tricky I was to be able to substitute some missing ingredients with something in hand:-D
The name ratatouille comes from the french word for 'mix' and was previously used as a familiar term for any stew. I was told about the very traditional version of Ratatouille that each ingredient should be fried separately before the final simmering.
Ratatouille Easy Version
Serve 2
  • 3 beautiful medium tomatoes
  • 3 small aubergines, diced or cut in any shape you like
  • 10 haricots, cut in smaller pieces
  • 2 tablespoons olive oil or other vegetable oil
  • 2 garlic cloves, crushed
  • 1 tablespoon mushroom sauce
  • 1 cup water mixed with 1/4 cube chicken stock powder
  • 1 tablespoon tomato paste (purée)  Note: I used Italian Tradizionale Passata with herbs (Basil, Parsley, Oregano, Onion extracts)
Ratatouille, my version:-)
  • Score a cross in the top of each tomato, plunge into boiling water for 15-20 seconds and then peel the skin away from the cross. Chop roughly.
  • Heat the oil in a frying pan or a wok. Fry the garlic, haricots and the eggplant together with mushroom sauce  over low heat until the haricot becoming a little bit soft and the eggplant becoming lightly browned all over.
  • Then add the tomato, stock water, tomato paste, stir well, cover and cook for 5-10 minutes.
  • Serve warm with fried diced golden brown potatoes:-)
Bon Appétit

Fried Rice Eurasian Style

I'm so happy to share with you one of my nostalgic dishes today: Fried Brown Rice with green peas, sweet corn, red bell pepper and Bacon bliss:-)
I love it! When I was 9 y.o. girl, my grandfather taught me how to cook yummy "fried rice" for the very first time and that we really enjoyed our late dinner together in the kitchen:-)

Ingredients:
Carrot (half medium size), cut in dice shape
2 tablespoons green peas
2 tablespoons sweet corn
1 Spring onion
1 Coriander
4 cloves garlic, finely chopped
4 shallots, finely chopped or thin sliced
1/2 Bell pepper, cut in small squared-pieces
4 cups cooked brown jasmine rice
4 bacon ribbons, cut in smaller pieces
2 teaspoons curry powder
2 tablespoons mushroom sauce
1 tablespoon soy sauce
1 tablespoon tomato ketchup
2 tablespoons Canola oil or olive oil
  • Place a wok over high heat. Add bacon and a little oil and reduce heat after a minute. Turn the bacon to the other side until lightly brown cooked. Remove them to a bowl.
  • Add in Canola oil, into remaining oil from cooking bacon, add in chopped garlic, shallots as well as carrots, allow to cook until the carrots, becoming a little bit soft.
  • Then add rice, mushroom sauce, soy sauce, ketchup and stir-fry for about 2-3 minutes. If too dry, add a little more oil.
  • Sprinkle curry powder while adding in green peas, sweet corn, bell peppers and toss gently together.
  • Then, add in bacon bliss, chopped spring onions & coriander as finale.
  • Spoon into individual bowls and garnish with sliced cucumbers and goat chili. Serve warm.
 Bon Appetit!

Iced Sala Syrup with Milk (Thai Style)

Sorry for not getting back to you earlier! It's simply because I've lost my appetite...Oh! This is terribly unbelievable for someone who is a real "Gourmande"! Well, It can happen to anyone, once in a while...and that I put all the blames to the hot & humid weather, knowing that Summer is just right at our doorstep...and that "Water Festivals" or Traditional Thai New Year is in the coming month, the hottest month of the year, in Thailand! So I have got a thirst-quenching refreshment for you to have a sip or slurp-up in these hot summer days:-) We, Thais, call this lovely pinkish drinks "Nom Yen", which can be translated as "Chilled Milk" or Milk blended with Ice cubes...

2 tablespoons Grenadine syrup or
Hale's Blue Boy Brand's "Sala" flavoured syrup

100 ml water
2 tablespoons Evaporated Milk

Serve 1

These are what you need:-)
Easy how to:
In a long water glass, add syrup of your choice, milk and water and stir well until the mixture becoming pastel pink colour. Add in small ice cubes and top with evaporated milk. Serve chill:-)
Note: Some people may also add in a little bit of condensed milk, but not for me, please:-)

Simple Chocolate Mousse

I often use this one for
various chocolate dishes,
due to its smooth taste
as well as my
light-weight pocket:-)

*********
One of my favorite desserts of all time I can think of is simply
"Chocolate Mousse"...
I am Chocoholic type of person who cannot say "No" to all sorts of sinful chocolate desserts. My specification is not plain &  common "Dark, Tall & Handsome", but "Dark, Delectable & Decadent":-)
I know that a love story between us will never fail as It's an everlasting love:-)

I love chocolate mousse in small glasses
as I can always have a good excuse
for being too immoderate.
You see! Size really matters:-)
*********
Ingredients:
(Serve 12)
400 g dark chocolate, chopped (50% plus plus )
12 eggs
2 pinches of salt
2 tablespoons Brandy, Rum, Grand Marnier,
chocolate peppermint liqueur, Crème de Cacao or water
  • Put the chocolate in a bowl over a pan of simmering water. Leave the chocolate until it looks soft and then stir until smooth & melted. Remove the bowl from the pan.
  • Separate the eggs and add the yolks one by one, in the chocolate bowl, beating in each one with a spoon until well amalgamated before adding the next (and your favorite liqueur, of course!);
  • Using an electric mixer or balloon whisk, beat the egg whites and a pinch of salt in another bowl until stiff peaks. Whisk one-third of the egg white into the chocolate mixture until it is perfectly blended in, then lightly fold in  the remainder with a spatula or a large metal spoon.
  • Pour into glasses or soufflé bowls, cover and refrigerate for at least 4 hours.
Note: If it is not sweet enough for your sweet teeth, please whisk 500 ml whipping cream, adding 3 tablespoons superfine sugar gradually. Then whip the cream as chocolate mousse topping, just before serving! :-)
Katherine Hepburn, seventy, actress, asked how she stays trim:
'I don't have to watch my figure as I never had much of one to watch.
What you see before you is the result of a lifetime of chocolate.'

Khaolak Pizza, Pasta & Steak Restaurant

Today, it is my distinctive pleasure to introduce you to a cozy restaurant in Khaolak, located approximately 150 kms North of Phuket, where I and my lovely friends had our get-together's treat some times ago. The restaurant was founded a couple years ago, by a Thai couple who had accumulated their food & beverages' experience , in leading hotels for over 10 years. When we arrived there, we saw many open-air tables, occupied by 100% "Farang" tourists. Note* Farang in Thai means Western People.
Apparently, we should be considered as "foreigners" instead, as for being the only Thai guests in the house and that our choice was indoor seating:-) The restaurant owners greeted us with smiles while handing to us a couple of illustrative food dictionaries so that we could linger over the menu  before making up our mind to order, at last! (the challenge: we wanted to try everything!) Our order was mainly justified to fit the size of stomach :-) Moderation is not included in our gourmand's terms & conditions, plus appendixes;-) as we, three, were swept away by scrumptious comestibles, presenting right in front of us!... well...well...well...
If you're ready, please loosen your seat belt and  follow me, then:-)
Crispy Crunch Shrimp Fritters Salad (60.-THB)

a friend's dish, well worth a slurp:
Beetroot Ravioli with Spinach

Of course, there's always a room to be filled with
the restaurant's top-rated-dessert, before crawling & rolling back home!

Hello dears!  I cannot believe it’s March already… Time flies… March not only reminds me of lovely daffodils with a refreshing scent of Spring around the corner, but also a warm & vivid souvenir of Hoi-An, where I spent a week with my auntie, in March 2011.

me...wandering around art galleries along
Hoi An's cultural street...
a snap-shot, taken by my aunt from the opposite side of the street. :)
A Brief History of Hoi An
Hoi An is an ancient town located in the central province of Quang Nam and is home to approximately 120,000 inhabitants. In the 1st century the city was known as Lam Ap Pho (Champa City). It possessed the largest harbour in South East Asia. Between the 7th and 10th centuries, the Cham people of Champa, controlled the strategic spice trade and with this came tremendous wealth. Hoi An was an important trading centre in Vietnam in the 16th and 17th centuries, where Chinese from various provinces as well as Japanese, Dutch and Indians settled. During this period of China trade, the town was called "Hai Pho" (seaside town) in Vietnamese. Originally, Hai Pho was a divided town with the Japanese settlement across the "Japanese Bridge" (16th-17th century).
The Chua Cau Bridge is a unique covered structure built by the Japanese, the only known covered bridge with a Buddhist pagoda attached to one side.
Japanese Bridge
Hoi An’s most celebrated icon is the Japanese-covered bridge
which lies on the west end of Tran Phu.
Its pinkish hue, ornate roofing and arched frame have been restored to original design.
Built in the 1590s by the Japanese, the bridge hosts a temple and is quartered by monkey and dog statues.
Note from a local resident: Built in the Chinese year of Monkey and finished in the year of Dog
No wonder I saw a monkey statue at the entrance of the bridge and a dog one at its end!
Hoi-An by the river: so quaint and breezy,
for a romantic stroll with your beloved!!!
In 1999, Hoi An was declared a World Heritage Site by UNESCO as a well-preserved example of a South-East-Asian trading port of the 15th to 19th centuries, with buildings that display a unique blend of local and foreign influences.
The Charm of Hoi-An
Apart from its UNESCO’s world renowned heritage site, I personally think that Hoi-An, is more than just
a World’s heritage site with its uniquely attractive characteristics, to discover and to fall in love with:-)
a Grandma with Red Lanterns
in front of Citronella Restaurant
White Marble Restaurant & Wine Bar
I could not get tired of strolling along the streets and soaking up the aesthetic of the antiquated rooftops and colors of UNESCO protected buildings, surrounded by local & foreign passersby, enjoying sightseeing those folk arts & handicrafts at some old houses as well as listening to the melodic sound of local Vietnamese dialect, from shop ladies. Such pleasant memories back then...
One thing which fascinated me and my aunt when mentioning the name “Hoi-An” is, of course, Hoi-An authentic cuisine!!! We had such a great opportunity to get to know some characters from the hotel and from the streets whose kindness was greatly appreciated. I was so happy when they introduced us to some authentic Hoi-An’ s “what & where-to-eat” with my twinkling eyes of gourmand, exactly like a child with a brand new toy!
Vietnamese Coffee Treat
Hoi An "Central Market"
One of Asia’s foremost sea-trading ports,
Hoi An was literally one big market.
Today, it continues to thrive as a city of commerce.
One of our top favorite finger foods there, is “Nem Ran"
(Banh Trang Reh), Crispy Mesh Rice Paper Rolls (lightly fried)
at “Streets Restaurant, where we discovered by chance
whilst strolling along the chilly romantic streets of Hoi An
in the evening, right after our arrival & check-in at the hotel.
Thit Nuong
The Best "Thit Nuong" in Hoi An served with vegetable
and spicy peanut sauce!
My aunt w/ her-Sit & Chill-:)
Then the next day with another delectable food discovery, called “Thit Nuong” or Vietnamese BBQ pork satay, nearby the river, where you can sit down around the well, talking with no talks but body language with lots of smile & laughter to a nice lady who sells the best “oh-so-yum” Thit Nuong in town.
End product of Rice Paper-
ready to be served...
The last day in Hoi An, the lady imparted to us that, the secret of delicious Thit Nuong, was inherited from her husband’s grandmother and that the thin & soft rice paper roll, commonly wrapping the grilled meat whilst eating, is freshly made every morning, by herself and sometimes by her brother-in-law.
Madame Mai & Anne,
making her first Bánh Xèo! :)
We were also introduced to the owner of Bale Well restaurant, where we had our authentic Vietnamese cooking class, located not far from the famous well of origin Cham design, built in the 10th century, the only traditional well used by locals to draw water for local noodle dish called “Cao Lau”.

"Cao Lau"Hoi An’s exclusive noodle dish. Chewy, Udon-like noodles are topped with pork slices, herbs, crunchy noodle off-cuts, bean sprouts, pork broth and chili paste.
To finish up everyday’s "must-eat", I always enjoyed the best Hoi-An sweet treat "Dao Ho", soy custard soaked with caramelised ginger syrup. p.s I had 5 bowls for the first day;-) Oi Troi Oi *(* อ่านออกเสียงว่า "โอ่ยใจโอ้ย" Vietnamese language, literally translated as Oh My God in English)!!!!
Super-delicious Dao-Ho of HoiAn!
