4 days ago, I bought a bunch of beautiful banana from a local market with only thought of making my own version of Nutella-Banana Ice Cream, adapted from a rich chocolate ice cream recipe. This is a good creamy ice, smooth and rich in feel-good Nutella-Banana aroma:-) You can vary the amount of whipped cream you add to suit your taste or zero-whipped cream as you please. This ice-cream is ideally good sprinkled with a thick layer of chopped cashew nuts or toasted almonds/macadamia nuts before serving:-)
Ingredients:
- 275 ml Ovaltine Malt-choco drinks or single cream or milk
- 3 beautiful Bananas
- 225g Nutella
- 3 Egg yolk(s) Note: I used only 1 egg yolk:-)
- 1 teaspoon Brandy or Whaler's Vanilla rum
- *150 ml whipping cream or double cream Note: I didn't have them both... so leave them:-)
To make Nutella Banana Ice-cream:
- Scald the Ovaltine or single cream or milk, then remove from the heat. Add the Nutella and stir until smooth.
- Blend a little bit of milk with banana in a blender until thick and smooth.
- Whisk the yolk(s) until pale and thick, then slowly whisk in the Nutella milk..
- Return to the saucepan and stir over a gentle heat until the mixture thickens. Pour in banana mixture as well as Vanilla rum. Mix well. Remove from the heat and leave to cool.
- * Whip the cream until thick but light and fold into the cooled custard.
- Pour into a freezing tray or ice cream box and freeze.
- Remove from the freezer at least 5-10 minutes before serving.
Ta da! Nothing beats my homemade Tryptophan Icecream, dressed with crispy Vanilla wafer-roll sticks, Lady fingers, Macadamia nuts & Cherry in Maraschino syrup! One scoop could be too moderate!:-) |
